In this post, I’m going to share a few things I found worth exploring. I hope you enjoy reading it as much as I enjoyed putting it together!
Sure, here's a detailed recipe for Amritsari Chole Kulche:
*Ingredients for Chole:*
For Chole:
- 1 cup chickpeas (chole), soaked overnight
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, finely chopped

- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon amchur (dry mango powder)
- Salt to taste
- 2 tablespoons oil or ghee
- Fresh coriander leaves for garnishing
For Kulche:
- 2 cups all-purpose flour (maida)
- 1/4 cup yogurt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Salt to taste
- 1 tablespoon oil
- Water as needed
Personally, I enjoy the little details that make each topic unique. While putting this post together, I wanted to keep things simple, interesting, and easy to understand, so you can take something useful away from it.
*Instructions:*
1. *Prepare Chole:*
- Pressure cook the soaked chickpeas until soft and tender.
- Heat oil or ghee in a pan. Add cumin seeds and let them crackle.
- Add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for a minute.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add coriander powder, red chili powder, turmeric powder, and salt. Mix well.
- Add cooked chickpeas along with some water (if needed). Let it simmer for 10-15 minutes.
- Finally, add garam masala and amchur powder. Mix well and cook for another 2-3 minutes.
- Garnish with fresh coriander leaves and keep aside.
2. *Prepare Kulche:*
- In a mixing bowl, combine all-purpose flour, yogurt, baking powder, baking soda, salt, and oil.
- Knead the mixture into a soft dough, adding water as needed. Cover and let it rest for 30 minutes.
- Divide the dough into equal-sized balls and roll them out into oval or round shapes.
- Heat a tawa or griddle. Place the rolled kulcha on the hot tawa and cook until bubbles start appearing on the surface.
- Flip the kulcha and cook the other side until golden brown spots appear.
- Repeat the process with the remaining dough balls.
3. *Serve:*
- Serve the hot Amritsari Chole with freshly cooked Kulche.
- Garnish with some chopped onions, green chilies, and lemon wedges on the side.
- Enjoy the delicious and authentic flavors of Amritsari street food!
Hope you enjoy making and eating this flavorful dish!
